  • 250g macaroni
  • 50g butter
  • chopped parsley
  • Louisiana Hot Sauce
  • salt & pepper
  • 220g mature cheddar (grated)
  • 1 can evaporated milk
  • 2 eggs (beaten)


  1. Preheat oven to 180C

    Boil a large pan of salted water, put the macaroni in and boil until cooked, about 12 minutes. Drain and rinse in hot water.

  2. Place cooked macaroni in a large casserole dish, dot with the butter, a few dashes of Louisiana Hot Sauce, some chopped parsley and season with salt & pepper. Sitr until the butter has melted.

  3. Sprinkle over the grated cheese. Beat the evaporated milk and eggs together and pour over the macaroni and cheese. Use a fork to mix well, distributing the cheese aal through the macaroni. Bake in a preheated oven for 40-45 minutes until the the top is well browned.
