Chorizo with Potato Share this recipe

Ingredients

  • 500g small waxy potatoes (scrubbed & boiled for 15 mins)
  • 2 tblsl. olive oil
  • 1 large red onion (finely chopped)
  • 4 cloves garlic
  • 1 Pimento Rojo (diced) Canned red pepper
  • 2 Cooking chorizo (cut into chunks)
  • 1/2 can Tomate Frito
  • 1 glass White Wine
  • Salt & Pepper
  • Louisiana Hot Sauce

Directions

  1. Saute the onions in olive oil for 10 minutes, add garlic and Pimento, continue frying for 5 minutes. Pour in the Tomate Frito and wine, bring to the boil and simmer for 5 minutes.

  2. Then add Chorizo and boiled potatoes and simmer for a further 15 minutes, stirring occasionally.

  3. Season with salt, pepper and Louisiana Hot Sauce.
