Chorizo with Potato Share this recipe

- 500g small waxy potatoes (scrubbed & boiled for 15 mins)
- 2 tblsl. olive oil
- 1 large red onion (finely chopped)
- 4 cloves garlic
- 1 Pimento Rojo (diced) Canned red pepper
- 2 Cooking chorizo (cut into chunks)
- 1/2 can Tomate Frito
- 1 glass White Wine
- Salt & Pepper
- Louisiana Hot Sauce
Saute the onions in olive oil for 10 minutes, add garlic and Pimento, continue frying for 5 minutes. Pour in the Tomate Frito and wine, bring to the boil and simmer for 5 minutes.
Then add Chorizo and boiled potatoes and simmer for a further 15 minutes, stirring occasionally.
Season with salt, pepper and Louisiana Hot Sauce.
