Fox's Amazing Beef Rendang Share this recipe

- 2 medium onions (chopped)
- 2 cloves garlic
- 1 star anis
- 1 cinnamon stick
- 1 sachet Fox's Bumbu Rendang
- 500g stewing beef
- 450g can Coconut Milk
- 4 Fox's Dried Kaffir Lime Leaves
- 2 tsp. Por Kwan Tamarind Paste
- 4 tblsps. dessicated coconut (toasted)

Mix half of the Fox's Rendang sachet with the cubed beef and set aside. In a little oil fry the onions, garlic, star anis and cinnamon stick for 5 minutes then add the remaining Fox's Rendang sachet and fry for a further 5 minutes to release the great aroma.
Stir in the beef and keep frying until browned. Add the Coconut Milk, Lime Leaves and Tamarind Paste. Cover with water or beef stock and simmer, covered until the beef is tender, about 1 hour.
When the beef is cooked, remove the lid and simmer for a further 10 minutes, there should be almost no liquid left. Stir in the toasted coconut, this will dry up the remaining sauce, leaving a wildly aromatic dry curry.
Serve with spiced potatoes and green beans or rice flavoured with Nasi Kuning
