Vietnamese Meatloaf Sandwich with Carrot & Pickle Share this recipe

  • 500g of minced pork
  • 100g minced ham
  • 1 tsp of five spice powder
  • 1 tsp of Fox's Sambal Oelek
  • 1 tbsp of fish sauce
  • 1 leek (sliced fine)
  • 4 tsp cornflour
  • 1 medium onion (grated)
  • 2 cloves of garlic (minced)
  • 1 tsp of sage
  • salt and pepper


  1. Preheat oven to 180C

    Mix the meat and spices. Fry the leek, onion and garlic until soft. Add to the meat and mix in the cornflour. Season and mix together with a fork.

  2. Place on a sheet of tin foil and shape into a loaf. Roll up and seal by folding the tin foil. Bake for 40 minutes.

  3. Serve on baguettes. Top with carrot and pickle and Sriracha Hot Sauce.

  4. Carrot and Pickle

    2 carrots cut into match sticks
    1 jar of hamburger pickles
    2tsp nuoc cham

    Put carrots and pickles in a bowl, douse with nuoc cham 4 tablespoons of pickle juice and leave to marinade for a couple of hours or overnight
